The Jikko Sujihiki 270mm slicing knife represents over a century of Japanese knife-making expertise. Founded by Itaro Jikko, the company upholds the principle of ichi-go ichi-e—“once-in-a-lifetime encounter”—putting care and precision into every detail. Each knife is hand-finished, with special attention to the spine and chin, for a refined and professional feel.

White Steel No.2 Carbon Core
Made with high-performance White Steel No.2, this double-edged blade is known for its exceptional sharpness and ease of sharpening. With a hardness of 60–61 HRC, it’s ideal for cleanly slicing meats, fish, and roasts with minimal resistance.

Long, Balanced Blade for Smooth Slicing
The 270mm blade length is optimal for long, single-stroke slicing, while the 3.2mm spine adds stability without sacrificing agility. Perfect for both kitchen pros and skilled home chefs.

Traditional Shitan Wood Handle
Fitted with a Pakka wood ferrule, the Shitan wood handle is comfortable, durable, and beautifully grained. Its classic Japanese shape ensures a secure, balanced grip in extended use.
