Crafted by the artisans at Jikko—whose legacy began over 100 years ago in Sakai, Japan—this 270mm Sujihiki reflects a deep commitment to craftsmanship and traditional values. Inspired by the spirit of ichi-go ichi-e ("once-in-a-lifetime encounter"), Jikko knives are meticulously finished, especially around the spine and heel, to offer a seamless experience in both function and form.
White Steel No.2 Carbon Core
This double-edged blade features a White Steel No.2 core, prized for its razor-sharp edge and ease of resharpening. Hardened to HRC 60–61, it delivers exceptional cutting performance, ideal for slicing meat, fish, and roasts with clean, precise strokes.
Long, Thin Blade for Effortless Slicing
The 270mm length is perfect for pull-cut slicing, reducing friction and tearing. The 3.2mm thickness offers a stable yet agile profile, allowing for greater control in every cut.
Traditional Japanese Shitan Handle
Paired with a durable Pakka wood ferrule, the Shitan wood handle has a comfortable, slightly rounded shape for a secure grip. Lightweight and well-balanced for long prep sessions.
