The Jikko Deba 165mm is a powerful, traditional Japanese knife designed for breaking down whole fish and meat with precision and strength. With roots tracing back over a century, Jikko knives are made with a once-in-a-lifetime spirit—reflecting the philosophy of ichi-go ichi-e, meaning “treasure every encounter.” Each knife is hand-finished with meticulous attention to details like the spine and chin for a clean, professional feel.

White Steel No.2 Carbon Core
Forged from White Steel No.2, this Deba knife offers razor-sharp performance with excellent edge retention. With a hardness of 60–61 HRC, it delivers the precision required for filleting while maintaining strength for tougher butchery work.

Heavy, Thick Blade for Butchery Tasks
The 165mm single-bevel blade is 8mm thick, giving it the weight and sturdiness needed for heavy-duty kitchen tasks like cutting through fish heads or joints (but not bones or frozen items). Its tall profile adds control and safety when working close to the edge.

Traditional Shitan Handle
Fitted with a Pakka wood ferrule, the Shitan wood handle provides a durable, comfortable grip and elegant finish. Balanced and traditional in form, it supports extended use without hand fatigue.
